Old-World Influence
Employing techniques shared with our sister estates, Château Fonplégade and Château L’Enclos, Winemaker David Scott crafts Bordeaux-style wines built to evolve and mature for decades. Gentle winemaking preserves structure without sacrificing vitality, yielding wines that are precise and textural, shaped by site rather than style, and inviting collection and contemplation.
Guided by the Estate
Our approach to winemaking begins in the vineyard, with each block farmed, harvested, and vinified individually. The fruit is hand-harvested and hand-sorted, then gently crushed and moved by gravity, with spontaneous fermentation encouraged whenever possible. In the cellar, restraint guides every decision. Extended aging in barrel allows the wines to develop naturally, revealing the character of our Howell Mountain estate.
The Portfolio
Our flagship ADAMVS Cabernet Sauvignon is structured and deep, sourced from the estate’s richest soils, its citrus and tobacco notes reflecting that depth. QUINTVS, a red of concentration and herbaceous aromatics, comes from our shallowest, most exceptional blocks, yielding complex notes of earth and dark plum. Generous and supple, TÉRES, our more approachable Cabernet, grows in moderate soils that produce vibrant red fruit and floral aromas. And our Bordeaux-style Sauvignon Blanc ages nearly two years in barrel for a subtly opulent style.
STEPHEN
STEPHEN is an intercontinental collaboration between our Napa and Bordeaux teams. Select barrels travel from Château Fonplégade to ADAMVS, where they rest, breathe, and are blended with complementary Howell Mountain lots, resulting in a wine of European elegance and American exuberance. Proceeds support the vital work of the Adams Neurosciences Center at Yale New Haven Hospital, advancing cures for neurological disease and honoring the memory of Stephen Adams, who passed away in 2024.
